SICILIAN RICE ITALIAN SAUSAGE
AND WALNUTS
 
1 lb. Italian sausage, cut up in 1/2" pieces
4 c. chicken broth
2 lg. tomatoes, chopped
1 lg. yellow onion, sliced thin
1 c. mushrooms, sliced
1 lg. bell pepper, green, red or yellow
3 cloves garlic, chopped fine
1/2 c. walnuts, chopped fine
2 tbsp. olive oil
3/4 c. short grain rice (aborris would be nice)
Salt & pepper to taste

In a 6 quart heavy pot brown sausage in olive oil. Remove and drain on paper towel. Saute onions in remaining oil until lightly brown. Add mushrooms and pepper; saute 2-3 minutes. Add chicken broth, tomatoes, garlic, walnuts and bring to a boil. Add rice and cook until tender (about 15 minutes), covered. Serves 6.
