ITALIAN SAUSAGE SURPRISE 
This dish is considered one of my signature dishes all of my friends and family love. it's good enough that my friends that hate pork have eaten almost a whole batch by themselves.

1-2 pounds sweet or spicy Italian sausage links
2 (15 oz. ea.) cans tomato sauce
1 can water (use empty sauce can)
1 large yellow onion, chopped
1 (4 oz.) container of any medium salsa, add only for spicy taste the hotter you like it the more or less you add
salt and fine ground black pepper, to taste
granulated garlic powder, to taste
fine ground black pepper, to taste
sliced cheese (preferably American or cheddar)
2 cups rice (I use Minute Rice)

In a stock pot boil Italian sausage, just before fully cooked poke each sausage to let out any grease. Remove sausage from pot and wipe pot out. Slice sausages into coins approx. 1/4-inch thick.

In pot brown chopped onion, add the sausage coins, tomato sauce, water, salt, pepper, garlic and salsa to taste.

Note: You can add more tomato sauce to mixture, you want the sauce to at least cover the meat, more sauce stretches the dish farther and it will still taste just as good, just make sure to add tomato sauce and water 2:1. Bring dish to a boil, and turn off heat.

In separate pot prepare your favorite rice.

To serve dish: In individual bowls spoon a portion of rice, top with cheese, and finish with sausage sauce.
