PAN FRIED FISH AND HUSHPUPPIES 
1 1/2 lb. catfish or other fish
1 1/2 tsp. salt
1 tsp. pepper
1/3 c. flour
2 eggs, well beaten
1 c. self rising corn meal
Shortening

Rinse fish and pat dry; melt shortening in large skillet. Sprinkle salt and pepper on fish, coat fish with flour, dip in eggs, then corn meal. Put fish in hot oil, fry for 2 minutes per side or until brown, drain on paper towel.

HUSHPUPPIES:

1 egg
1 1/4 c. buttermilk
2 c. self rising flour
1/2 tsp. baking soda
1/4 c. chopped onion
Shortening for frying

In mixing bowl beat egg, stir in buttermilk, corn meal, soda and onion. Blend. Drop by teaspoonfuls into deep grease; fry until golden brown. Drain on paper. Makes 24.
