EASY CROCK POT PORK BARBECUE 
1 (5-7 lb.) fresh pork shoulder
1 tbsp. salt
2 tbsp. sugar
Pepper to taste
1 1/4 c. vinegar
1/2 c. ketchup
1/2 c. barbecue sauce
1 1/2 tbsp. crushed red pepper
Dash of hot sauce

Put pork in crock pot. Sprinkle salt and pepper over shoulder and add vinegar. Cover and simmer 12 hours.

Remove from pot and pick meat from bones. Strain liquid and keep approximately 2 cups. Add remaining ingredients. Mix with minced meat and return to crock pot. Cook on low until juice is cooked down (or cook on a high setting for shorter time). Freezes well.

I must have made this a dozen times by now. If you don't like to waste time with spice rubs and chopping onions in the morning, you won't find an easier recipe. Just before dinnertime, add the rest of the ingredients and let it cook while you're getting sauteed onions and sides ready. Because the ingredients are so simple, I always have them on hand including pork in my freezer. Boneless pork loin works great.

I made this today for the first time and it came out delicious. Everyone in the house loved it. I didn't have enough for everyone after it was all said and done because my roast was only 3 lbs. Make sure you have at least a 4 or 5 lbs roast to get maximum meat. Other then that cook away, very easy to make if you put the roast in in the morning and when you come home walla your ready to add the other ingredients and finish the meal.
