CROCK-POT BBQ RIBS | |
1 or 2 "full racks" pork loin ribs 2 large potatoes, peeled and diced 1 large onion, chopped 1 (16 oz.) bag baby carrots 1 (8 oz.) pkg. fresh sliced mushrooms (optional) 2 (16 oz. ea.) bottles barbecue sauce Slice and layer bottom of Crock-Pot with chopped onion. Peel and wash potato and cut into squarish chunks then layer over the onion. Slice baby carrots in half and layer with sliced mushrooms (if using) over potatoes. Then cut ribs into 2 to 3 rib sections and place one layer over everything. Coat with barbecue sauce rubbing it over the ribs coating them completely. Continue until all rib sections are in pot. Squeeze in last of barbecue sauce, cover and cook on LOW for approximately 8 hours. When done pull out ribs and scoop the rest into a dish of some sort. The ribs will fall off the bone! Note: I use "Sweet Baby Ray's" for the BBQ sauce because it doesn't burn and holds the most flavor after cooking. Mushrooms are optional. Submitted by: Jbarstow |
