POTATO SALAD 
5 lbs. new potatoes, boiled & cubed
1/2 c. chopped celery
1/4 c. chopped onion & parsley
5-6 hard boiled eggs
1/2 c. juice from sweet pickles
1/2 c. vinegar & vegetable oil
1/2 c. lite Miracle Whip
1/2 c. lite sour cream

In large bowl mix potatoes, celery, onions and parsley and add liquid. Let marinate for several hours or overnight. An hour before serving, chop eggs and add to potatoes. Add mayo mixture (add more mayo mixture if needed, potatoes should be covered). Decorate top with egg slices or parsley sprig or mint sprig and paprika. Serves 12 to 20 people.

I like this as most of recipe is done day before and finished up day of party. May be doubled.
