CARROT PUDDING 
This is a family favourite in place of plum pudding.

CARROT PUDDING (FOR CHRISTMAS):

1/2 cup (1 stick) butter
1 cup brown sugar
2 cups raisins
2 cups grated carrots
2 cups fine breadcrumbs
2 eggs
2 tsp. spice (nutmeg, cinnamon, cloves, allspice)

Mix all ingredients well. Steam in buttered tin (placed buttered tin in pot of water on stove) or in top of double boiler for about 3 hours.

HARD SAUCE:

butter
icing sugar
brandy

Cream together like making icing for a cake. Should be somewhat thick and will melt over warm carrot pudding.
