SWEET AND SOUR PORK 
2 c. cooked pork roast, cubed
1 c. pineapple juice
1 c. broth from roast
1/4 c. brown sugar
1/4 c. vinegar
2 tbsp. cornstarch
1 tbsp. soy sauce
1/2 tsp. salt
3/4 c. green pepper, sliced
1/4 c. onion, sliced
1 c. chunk pineapple, drained

Mix pineapple juice, broth, brown sugar, vinegar, soy sauce and salt. Bring to a boil. Mix cornstarch with a small amount of water. Add to boiling mixture and cook until thick. Add green pepper, onion, pineapple and cubed pork. Let cook about 3 minutes. (Do not overcook; pepper and onion should be crisp.) Serve over rice.
