SWEET-SOUR CHICKEN (OR PORK) 
2 chicken breasts (1/2 pork roast)
3 tbsp. soy sauce
1 tbsp. fresh minced ginger
1 bottle duck sauce
3 tbsp. cornstarch
7 scallions, diced
Pineapple chunks (optional)
2 apples, cut in sm. pieces, soaked in sugar (optional)
Peanuts, bamboo shoots, mandarin oranges, snow peas, broccoli (optional)

Cut chicken into small pieces. Mix soy, cornstarch, ginger. Put in chicken and marinate 15 minutes. Heat enough oil to cover bottom of wok or fry pan. Begin stir frying each ingredient as stated below.

Stir fry chicken or pork 3-5 minutes; remove. Stir fry diced scallions 1 minute, remove; stir fry optional ingredients until heated through or crisp- tender, usually 30 seconds to 2 minutes.

Combine all items with duck sauce, and heat through.
