OATMEAL - BANANA MUFFINS 
1 c. quick oatmeal
1/2 c. whole wheat flour
1/2 c. all purpose flour
1 tsp. baking powder
3/4 tsp. baking soda
2 tbsp. walnuts; optional
1/2 c. brown sugar
2 ripe bananas
3/4 c. skim milk
1 egg
1 1/2 tbsp. vegetable oil
1/2 tbsp. peanut butter

Preheat oven to 400 degrees. Spray muffin pan with cooking spray. In large bowl, combine dry ingredients. In food processor mix banana, milk, egg, vegetable oil and peanut butter. Add to dry ingredients and stir until just mixed. Spoon batter into muffin cups to 2/3 full. Bake 15-20 minutes. Cool and remove from pan. Makes about 15 muffins.
