OATMEAL BANANA MUFFINS 
1 1/2 c. rolled oats
1 egg, lightly beaten
1/3 c. brown sugar
1 1/4 c. flour
3/4 c. milk
1/2 c. oil
1 lg. banana, mashed
4 tsp. baking powder

Preheat oven to 425 degrees. Soak oats in mixing bowl in milk. Combine the egg, oil, sugar and banana, beating until smooth. Stir into dry ingredients. Pour in banana mixture. Fill muffin tin 2/3 full. Bake 15 minutes at 425 degrees.
