BANANA-OATMEAL MUFFINS | |
2 c. coarsely chopped walnuts 2 c. quick cooking oats (not instant) 3 c. flour 1 tbsp. baking powder 2 tsp. baking soda 1 tsp. salt 4 lg. ripe bananas 1 c. milk 1 c. honey 4 tbsp. butter, melted 1 egg Preheat oven to 400 degrees and grease muffin tins (3" x 1 1/2"). In small bowl mix 1/2 cup nuts and 2 tablespoons oats; set aside. Mix remaining nuts and oats with flour, baking powder, baking soda and salt. In blender, blend bananas, milk, honey, melted butter and egg. Stir banana mixture into flour mixture just until moistened but still lumpy. Spoon batter into muffin cups and sprinkle with reserved nuts and oats. Bake 25 to 30 minutes. Immediately remove from pans. Yield: 12 muffins. |
