MICROWAVE STUFFED CLAMS | |
1/3 c. finely minced onion 2 2/3 tbsp. butter 1 (8 oz.) can clams Fine crumbs of 5-6 slices of white bread Finely chopped parsley to taste Finely chopped green bell pepper to taste Microwave onion and butter in large covered bowl on high for 1 1/2-2 minutes or until transparent. Drain clams reserving juice. Mince clams. Add clams, crumbs and enough clam juice to moisten onion mixture. Mix in parsley and green pepper. Spoon into clam shells or custard cups. Arrange in circle in microwave. Microwave on high for 2 minutes. Rearrange clam shells. Microwave for 2 minutes longer. May broil for 2 minutes or until brown on top. May prepare and freeze for future use or refrigerate for 1-2 days before microwaving. Yields 10 servings. |
