BEST EVER BANANA BREAD | |
1 3/4 c. flour 1 1/2 c. sugar 1 tsp. baking soda 2 eggs 2 ripe bananas, mashed 1/2 c. oil 1/4 c. + 1 tbsp. buttermilk 1 tsp. vanilla 1 c. chopped walnuts Dry buttermilk works very well. Just add the dry with the flour, sugar and soda and the water with the other liquid ingredients. Combine eggs, bananas, oil, buttermilk and vanilla; add flour, sugar, baking soda, stirring just until combined. Fold in nuts. Pour into a greased 9 x 5 x 3 inch baking pan. Bake at 325 degrees for 1 hour and 20 minutes (check at 1 hour and 1 hour 10 minutes to see if done) until bread tests done. Cool on wire rack. This bread is very moist. The recipe does not double well; better to make 2 separate batches. Makes 1 loaf. |
