QUICK AND SIMPLE CHEESECAKE 
1 (8 oz.) pkg. Neufchatel (low-fat cream cheese)
1/3 cup plain yogurt
1/4 cup real maple syrup (grade B is best)
1 tsp. vanilla
1/2 tsp. almond extract
1 egg
1 ready-made graham cracker crust (Keebler)

Preheat oven to 375°F.

In a mixer: Blend the Neufchatel and yogurt working up to high speed until mixture is fluffy. Add in maple syrup, vanilla, and almond extract, mix. Adjust flavorings to taste. Then beat in one egg.

Pour into prepared pie crust and bake at 375°F for 25 minutes.

Chill and serve. If you use non-fat yogurt, the whole pie is about 1800 calories; 1/6 pie is 300 calories.

Makes 6 servings.
