CHEESE POTATOES 
8 potatoes cooked and sliced or diced
1 lb. Velveeta cheese
1 c. mayonnaise or Miracle Whip
1/2 c. chopped onion
Salt and pepper to taste

Combine all ingredients and put in greased casserole dish (2 quarts). Top with 1/2 pound chopped bacon and 1/4 cup iced black olives (optional). Bake at 325 degrees for 1 hour.
