OKRA FRITTERS 
1/4 c. cornmeal
1/4 c. all-purpose flour
1/2 c. onion, finely chopped
3 tbsp. parsley, chopped
2 tbsp. grated Parmesan cheese
2 c. sliced fresh okra (about 2/3 lb.)
1/2 c. evaporated milk
1 large egg, slightly beaten
1/2 tsp. salt
1/4 tsp. red pepper
Vegetable oil

Combine all ingredients except okra and oil. Add okra last. Heat oil in Dutch oven up to 350°F. Drop mixture by tablespoonfuls into hot oil, and fry until golden brown, turning once. Drain on paper towels. Sprinkle with more salt, if desired. Serve hot.
