GRANNY'S HOME-STYLE FRIED OKRA
3 c. fresh, tender, sliced okra (choose pods 3 to 4-inches long), slice 1/4-inch thick pieces
4 or 5 green onions, round sliced
salt and pepper to taste
1/2 c. flour
1/2 c. yellow cornmeal
1/2 c. melted shortening (in a skillet)

Place all ingredients in a large bowl and mix; toss with fingers until okra is well coated. Pour into the skillet with the melted shortening and cook, covered, over medium heat until okra is tender and begins to brown. Remove skillet from heat; let cover remain and allow to steam for 10 to 15 minutes before serving.

Serves 6 to 8.

This is the best way I've ever found to coat the okra. Easy and the coating stays on well. I added quite a few extra spices to my breading mix and didn't have green onions but will try that next time. Very good and a unique and effective cooking method.

This sounds great - but am wondering about the okra sitting for 10-15 minutes in the shortening... at the end. Seems like it would be absorbing the grease?

Great recipe. I put a little bacon grease in the skillet along with little oil. Added sliced green onion - when I turned okra (not in batter). Sprinkled with a little lemon pepper. Drained on paper towels. Oh! Yes! You will end up munching this - before it ever hits a dinner plate.
