FRIED OKRA 
Salad oil for frying
2 eggs
1 tbsp. water
1/2 c. flour
3/4 c. cornmeal
1 lb. okra, tops cut off
Salt

In deep fat fryer, heat oil to 350 degrees. Preheat oven to 200 degrees. In shallow dish, beat eggs with water. Place flour on paper plate, cornmeal on a second paper plate. Working in batches, dip okra in flour, shaking off excess. Dip in egg, then in cornmeal. Cook until golden, about 4 or 5 minutes. Drain on paper towel. Keep warm while cooking remaining okra. Sprinkle with salt. Makes 6 servings, 240 calories each.
