CARROT CASSEROLE 
2 c. cooked, mashed carrots
1 c. crushed crackers
1 c. milk
3/4 c. sharp cheese, grated
1/2 c. melted butter
1/4 c. grated onion
1 tsp. salt
1/4 tsp. pepper
3 eggs

Combine all ingredients with beaten eggs. Bake in 1 1/2 quart greased casserole dish. Bake at 350 degrees for 40 minutes.
