CARROT CASSEROLE 
2 c. cooked, mashed carrots, drained
1 c. grated Cheddar cheese
2 eggs
1/2 c. milk
1/4 c. butter (4 tbsp.)
Salt & pepper to taste

Mix together. Bake in Pam sprayed square casserole dish approximately 40 minutes at 350 degrees.

This is a super easy recipe that's become a family fave. You can easily play around with the ingredients as long as you keep the basics. For example I mash up as many carrots as we need (I don't measure, but it's more than 2 cups) and add in less cheese and milk but add in loads of extras...other veg, onions, etc. This is a very easy side dish and keeps well as a leftover.
