CAULIFLOWER - CARROT - BROCCOLI
CASSEROLE
 
1 head of cauliflower
1 bunch of broccoli
1 bag of carrots
2 - 1/2 tablespoons butter
1 teaspoon of dry mustard
1 tablespoon flour
1/2 cup milk
1/2 to 1 cup of Velveeta Cheese, cut into cubes
salt and pepper to taste
Regular white or wheat bread, 6 to 8 slices cut up in small cubes
1/2 cup butter melted

Preheat oven to 350°F. Chop up all your vegetables. Bring to a boil and cook until tender. Melt 1/2 cup butter in a pan. Put bread cubes in the butter, making sure that all the cubes are covered good with butter. Set aside.

For the sauce, melt 2 - 1/2 tablespoons butter, stir in flour and dry mustard. While stirring, alternate adding some milk and cheese until the sauce in creamy. Remove from heat. Drain vegetables, then put in a casserole dish or long pan. Mix in the buttered bread cubes and pour cheese sauce over it. Mix well.

Bake for about 15 minutes, until heated through.
