CARROT AND CHEESE CASSEROLE 
1 lb. carrots
1/4 tbsp. sugar
1 stick butter
1/2 lb. Velveeta cheese
1/2-3/4 pkg. Ritz crackers

Boil carrots until tender with sugar. Drain and put in casserole dish. Melt 1/2 stick butter and cheese. Pour over carrots. Do not scrape cheese from pan. Put in another 1/2 stick butter and melt crumble Ritz crackers into cheese pan. Stir and put on top of carrots. Brown in oven at 350 degrees for 15 minutes.
