MASHED POTATO AND CARROT CASSEROLE | |
6 med. potatoes, peeled & cubed 1 onion, coarsely chopped 6 med. carrots, peeled & cubed 1/4 c. butter (room temperature) 1 tsp. salt 1 tsp. pepper 1 tsp. parsley 1/2 c. half & half 1 egg, slightly beaten 2 tsp. butter, melted Parsley for garnish Cook and mash potatoes. Cook onion and carrot until soft. Puree cooked onion and carrots in food processor. Combine mashed potatoes, carrots and onion together with butter, salt, pepper, parsley, half & half and egg. Put into 1 1/2 quart baking dish. Drizzle with melted butter. Bake at 350 degrees for 35-45 minutes. Sprinkle with parsley and serve hot. Delicious served with Thanksgiving Dinner. |
