CORNSTARCH SUGAR COOKIES 
1 3/4 c. plain flour
1/4 c. cornstarch
1/2 c. softened butter
1 c. sugar
1 egg
1/2 tsp. vanilla
1 tsp. baking powder

Mix flour, cornstarch and baking powder together in a bowl set aside. In a large mixing bowl cream butter and sugar until light and fluffy. Beat in egg and vanilla. Gradually stir in flour mixture. Cover and chill until firm enough to roll. Flour working area well. Roll out to about 1/8 inch in thickness cut with cookie cutters. Brush with a beaten egg white. Bake at 350 degrees for 8 to 10 minutes. Makes 5 dozen.

Very easy recipe. Nice solid cookie to decorate. I brushed the first batch with the egg white and they came out with a shine to them. That was nice, but I thought, why do that when you're going to frost them. So I did the second batch without, which was nice too! They had a pleasant light flavor which is what you want for a deocrated cookie (my opinion). I would have rated this a 5 for being exactly what it is, an easy, solid cookie to decorate except it says it makes 5 dozen.... I made about 2 dozen large cookies and about 2 dozen tiny cookies (I had a little Noah's ark set). So if I make this recipe again, I would double it to get a decent amount of regular size cookies.

I was looking for a soft, chewy sugar cookie and really like this recipe with cornstarch. I used a little less flour and they turned out great!
