BANANA-COCOA CUPCAKES 
1/2 c. butter, softened
1 c. sugar
1 egg
1 1/2 c. all-purpose flour
1 1/4 tsp. baking soda
1/4 c. cocoa
1/2 tsp. ground cinnamon
1 1/4 c. mashed ripe bananas (about 3 med.)
Sifted powdered sugar

Cream butter; gradually add sugar, beating with electric mixer until light and fluffy. Add egg, beating well. Combine flour, soda, cocoa and cinnamon; add to creamed mixture alternately with bananas, beating well after each addition.

Spoon batter into paper-lined muffin pans filling half full. Bake at 350 degrees for 20 minutes. Cool in pan 10 minutes. Sprinkle with powdered sugar. Makes 1 1/2 dozen cupcakes.
