BANANA CUPCAKES (Or Carrot) | |
1 1/2 c. sifted all-purpose flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. salt 1 c. sugar 3/4 c. vegetable oil 2 eggs 1 c. bananas, mashed 1/2 c. nuts, chopped Blend together all dry ingredients except sugar. Set aside. Combine sugar and oil in large bowl and beat well. Add eggs one at a time, beating well. Mix in bananas. Add dry ingredients gradually. Beat until blended. Spoon into baking cups. Bake at 350 degrees for 15-20 minutes. 3 dozen cupcakes. 1 cup shredded carrots may be substituted for bananas. |
