BANANA-MINICHIP CUPCAKES | |
1 egg, beaten 2 ripe bananas, mashed 1/2 c. oil 1/3 c. milk 1 tsp. vanilla 2 c. flour 1/2 c. sugar 1 tbsp. baking powder 1 tsp. salt 1/2 c. mini chocolate chips Beat eggs in bowl. Add bananas, oil, milk, and vanilla. Stir together flour, sugar, baking powder, and salt. Stir in the minichips. Stir liquid into dry ingredients. Line cupcake tin with papers and fill about 3/4 full. Sprinkle with additional chips if desired. Bake at 400 degrees for 12-18 minutes or until golden brown. Remove from pan. Let cool and frost with chocolate frosting if desired. (Do not top with additional minichips if frosting is used.) |
