ALMONDS, CHICKEN, AND RICE
CASSEROLE
 
1/4 c. olive oil
1 c. wild rice
1/2 c. slivered almonds
2 tbsp. chopped chives (or green onion)
1/2 lb. sliced mushrooms (or 2 (4 oz.) cans)
3 c. chicken broth
2 c. cut up chicken

Put all ingredients, except broth, in a heavy skillet. Cook until rice turns yellow (stir to prevent burning). Put rice mixture, chicken, and broth in a casserole; cover tightly and bake 1 hour at 325 degrees.

Note: This is a good and healthy dish! You can even serve to company. Serves 6.
