BANANA CUPCAKES 
1/2 c. butter
1 c. sugar
1 c. mashed bananas
1 egg, beaten
1 1/2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla

Mix above ingredients, fill muffin tins (lined with cupcake liners) 1/3 to 1/2 full. Bake at 350 degrees for 15 to 20 minutes.

This is the absolute best recipe. Everyone LOVES them. I freely add dried cranberries, chocolate chips, and nuts, and call them Garbage Cupcakes. You can put icing on them or not. Sprinkle with some instant oatmeal before baking to give a different texture on top. Don't have quite enough banana? Replace with apple sauce. They're perfect no matter what. They are truly a favorite of all my friends! And cheap to make. I take them to large Alcoholics Anonymous meetings!

I made these yesterday for a cook-out we had last night....They were a HUGE hit. Everyone loved them so I made another batch today! This recipe made 17 cupcakes for me...When cooking for a crowd, I recommend doubling it. Thanks for sharing this recipe...It's sure to become one of my family/entertaining classics!

These were sooo easy and so good! I put all the ingredients in the vitamix and it took all of 5 minutes! I also used agave nectar and whole wheat flour instead of sugar and white flour. Also added some dark choc chips! Delicious! Fav banana recipe!!

Just made this with silicone cupcakes liners. I did add walnuts. Very good and the liners were great. So easy to take the liners off without losing any of the cupcakes. Very recommended.
