BANANA CUPCAKES 
1/2 c. shortening
1 c. sugar
1 tsp. vanilla
2 eggs
2 1/4 c. cake flour
1/4 tsp. baking soda
1 c. mashed banana
1/2 c. buttermilk
2 1/2 tsp. baking powder
1/2 tsp. salt

Cream shortening, sugar, and vanilla. Beat in eggs, one at a time. Sift dry ingredients; add alternately with banana and buttermilk. Fill paper lined cupcake pans half full. Bake at 375 degrees for 20 minutes.

BUTTER CREAM FROSTING:

Cream 1/2 cup butter, 2 cups sifted powdered sugar. Add 1 teaspoon vanilla and 2 tablespoons cream, beat.
