CREAM CHEESE CUPCAKES OR LITTLE
CHEESECAKES
 
CRUST:

5 whole graham crackers, crushed (or 3/4 c. graham crumbs)
1 tbsp. sugar
1/2 stick melted butter

FILLING:

1 (8 oz.) cream cheese
1 egg
1/4 c. sugar

FROSTING:

1 can pie filling or fresh fruit

Mix crust ingredients together and divide into 12 cupcake liners, press firmly. Mix filling together, beat until fluffy. Fill cups evenly. Bake for 10 minutes at 375 degrees. Cool and top with pie filling, if desired.
