CHEESECAKE CUPCAKES 
3 (8 oz.) pkg. cream cheese, room temperature
5 eggs
1 c. sugar
1/2 tsp. vanilla

Cream eggs and cheese together. Add sugar and vanilla; beat until smooth. Optional - add 1 vanilla wafer to each paper cup. Pour cream cheese mixture into 24 paper cups, 3/4 full. Bake at 300 degrees for 40 minutes. Cool 5 minutes.
