GINA'S ITALIAN MEATBALLS AND
SAUCE
 
Meatballs:

2 lb. pork, veal, and ground beef mixture
2 eggs
garlic powder
1/4 cup fresh parsley, minced
1 cup Italian bread crumbs
salt
a little bit of milk

Sauce:

2 cans tomato sauce
2 cans tomato puree
2 crushed tomatoes
1 tsp. olive oil

A Sprinkle of:

oregano
onion powder
garlic powder
Parmesan cheese

Combine all ingredients for meatballs in a large bowl. Form into meatballs. Fry them until brown in a skillet with 1/4-inch olive oil and several whole cloves fresh garlic, to flavor the oil.

Pour a few spoons of olive oil after done from the skillet into your sauce. Cook for 6 hours in sauce on simmer.

I tried the recipe for the meat balls. I did add some chopped onions and fresh garlic in the place of powdered. I also added just a touch of rosemary. I cheated on the sauce as I used ragu garden combo with some added fresh veggies. Put the browned meatballs in the sauce and let it slow cook for about an hour. My family said that was the best meatballs they had ever eat.

You're welcome. Its all about the frying of the meatball and simmering in the sauce for 8 hrs plus add little grease to the sauce...

I add the browned meatballs and sausage plus pork neck bones to the sauce right from the start. The meat gives exceptional flavor to the sauce. Also keep a can of tomato paste on hand. If sauce starts to thin, thicken with the paste. Add brown sugar to cut the acid from the tomatoes. A few Red pepper flakes for flavor.
