ONION DIJON MEATLOAF 
3-4 lbs ground beef
1 pkg onion soup mix
1 onion, coarsely chopped
1/2 cup dry Italian bread crumbs
2 eggs
3 tbsp Dijon mustard
Dijon mustard for spreading
bacon
Club house brown gravy mix

Preheat oven to 350°F.

In a large bowl, combine ground beef, bread crumbs, onion soup mix, and chopped onion. Mix together. Fold eggs and mustard in mixture. Mix well.

Pack mixture into a meatloaf pan. Spread enough mustard on top of meatloaf, then put about 3 strips of raw bacon on top of loaf. Cover with aluminum foil.

Bake for 1 hour and 15 minutes. Remove foil and return to oven until it gets golden brown. When done, remove from pan and put it on a plate, covered with aluminum foil. Take the meatloaf pan with the drippings reserved in it, add 1 pkg of club house brown gravy mix. Turn the top stove burner on and rest the meatloaf pan on it. Follow directions on clubhouse gravy pkg mix. Once gravy is done, Slice meatloaf as you serve topped with the gravy. Enjoy
