MEXICAN STYLE BAKED CHICKEN
BREASTS
 
2 whole chicken breasts, boned and skinned
2 eggs
1/4 c. salsa
1 c. fine bread crumbs
1 tsp. cumin
1 tsp. chili powder
3/4 tsp. garlic salt
1/4 tsp. oregano
4 tbsp. melted butter

Mix eggs and salsa in small bowl. Combine bread crumbs, chili powder, cumin, garlic salt and oregano in flat pan. Dip halved breasts in egg wash and then roll in crumb mixture. Repeat a second time.

Melt butter in 9x13 inch pan. Roll chicken in butter and place boned side down. Bake in 375 degree oven for 25-30 minutes until done. Serve with additional salsa, sour cream, guacamole and a wedge of lime.

My mother has been making this for us since we were kids! I'm glad I could finally find the recipe online. She always put this on a fat leaf of lettuce, and garnished with avocado slices, tomato, black olives, sour cream, salsa and lime slices. The presentation was beautiful for such a simple recipe!

This recipe needs more breadcrumbs. I would marinate the chicken in the salsa for more flavor. I wouldn't make it again.
