CRISPY BAKED CHICKEN BREASTS 
4 (1/4 lb.) boneless & skinless chicken breast halves
3 tbsp. reduced-calorie mayonnaise
1/2 c. Italian seasoned bread crumbs
Vegetable cooking spray

Brush chicken breast halves with mayonnaise. Dredge chicken in bread crumbs, and place on rack of a broiler pan coated with cooking spray. Bake at 425 degrees for 15 to 20 minutes or until chicken is done and coating is crispy. Yield: 4 servings. Serving size: 1 chicken breast half.

I selected this recipe because it is so easy. As I had no spray, I used a mixture of coconut oil and bacon grease on the baking pan. I had no reduced-calorie mayo, and so used real mayonnaise. Finally, I had bread crumbs I made myself out of a loaf I had baked which I didn't particularly like; I added some Italian spices to it. I did not substitute anything for the chicken, though. Oh, when I took it out of the oven, I placed a sliver of muenster cheese on top. It melted right away. It took me less time to prepare it than it took to write this, and it was delicious! I want to thank this author for giving me this sinfully easy recipe.

Really easy, and makes crispy chicken breasts with no frying mess! I put tinfoil under the rack in the pan and that caught any drips/crumbs. I also put bread crumbs & spices in a ziplock bag and tossed each piece of chicken in to coat them. I had to cook closer to 25-30 minutes (depends on thickness of chicken breast). I do not eat meat but cook it sometimes for my family-this was doable even for a vegetarian cook!
