BANANA-WALNUT BREAD 
3/4 c. butter
4 good size bananas, mashed
1 tsp. vanilla
1 tsp. baking soda
1/2 c. buttermilk
1 1/2 c. sugar
2 eggs, well beaten
2 c. sifted flour
1/4 tsp. salt
3/4 c. black walnuts, chopped (can use English walnuts)

Cream butter and sugar thoroughly. Blend in bananas, eggs and vanilla. Sift flour, soda and salt together. Stir into banana mixture alternately with buttermilk. Add nuts, mix well. Pour into 5 miniature or 2 medium loaf pans, greased and floured. Bake at 325 degrees for 35-60 minutes or until toothpick inserted comes out clean.
