MISS DAISY'S BEEF CASSEROLE 
2 lbs. ground beef
1 c. diced celery
1/4 c. diced green pepper
3/4 c. chopped onion
1 (29 oz.) can tomatoes
1 (16 oz.) can tomatoes
1 (8 oz.) can mushrooms, drained
1 (8 oz.) can water chestnuts, drained, sliced
1 c. cubed American cheese
1/2 c. chopped green olives
1/2 c. chopped ripe olives
1/2 tsp. salt
1/4 tsp. pepper
1 (6 oz.) pkg. noodles, uncooked
2 c. shredded cheddar cheese

Brown beef; pour off grease. Add celery, peppers, onion and saute. Add tomatoes and their juice. Add remaining ingredients except cheddar cheese. Simmer 20 minutes. Pour into 9x13 casserole. Put cheddar cheese on top. Bake 30 minutes at 350 degrees.

I used fresh mushroom sauteed in butter and used cheddar cheese, also pre-cooked the noodles a little before putting into the mix and into the oven.

If you like loaded pizza you will like this recipe. It's very tasty and is not all noodles like a lot of recipes. Feeds a lot of people and freezes well. A different twist from most casseroles.
