BANANA WALNUT BREAD 
3/4 c. butter
4 good-sized bananas, mashed
1 tsp. vanilla
1 tsp. baking soda
1/2 c. buttermilk
1 1/2 c. sugar
2 eggs, well beaten
2 c. sifted flour
1/4 tsp. salt
3/4 c. chopped walnuts (or pecans)

Cream butter and sugar thoroughly. Blend in bananas, eggs and vanilla. Sift flour, soda and salt together.

Stir in bananas, alternating with the buttermilk. Add nuts and mix well. Pour into a greased and floured loaf pan and bake at 325 degrees for 1 1/4 hours or until done.
