BANANA WALNUT BREAD | |
2 eggs 2 c. mashed ripe bananas 1 tsp. vanilla 1/2 c. chopped walnuts 1 1/2 c. raisin bran 1/3 c. vegetable oil 2 1/2 c. four 3/4 c. sugar 2 1/2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. baking soda Preheat oven to 350 degrees. Line 9 x 5 x 3 inch loaf pan with waxed paper. Combine eggs, bananas, vanilla, nuts, and raisin bran. Let stand 10 minutes. Stir oil into creamed mixture. Combine flour, sugar, baking powder, salt, and baking soda and add to cereal mixture. Stir just enough to moisten. Spoon into loaf pan. Bake 60-65 minutes or until done. Cool 15 minutes before removing from pan. Makes 1 loaf. |
