OPEN-FACED SANDWICHES
PRIMAVERA-STYLE
 
16 thin asparagus spears
1 1/2 tsp olive oil
1/8 tsp salt
1/8 tsp pepper
4 lg slices artisan bread, 1/2"-thick
2 tbsp purchased and ready pesto
4 thin slices deli ham
1 (8 oz jar) roasted red bell peppers, drained, rinsed, pat dry, sliced (1/2")
4 slice mozzarella cheese

Heat oven to 450°F.

Spread asparagus spears on rimmed baking sheet. Drizzle with oil. Sprinkle with salt and pepper.

Bake 10 minutes. Remove asparagus from pan. Reduce oven temp to 400°F. Place bread on baking sheet, bake for 10 minutes or until toasted, turning once.

Heat broiler. Spread 1/2 tablespoon pesto onto each bread slice, top with ham, peppers, asparagus, and cheese.

Broil 3-5 minutes or until cheese is bubbly.

Serve warm.
