ORANGE ZUCCHINI CAKE | |
1 c. softened butter 1 tbsp. orange rind 1 tsp. cinnamon 1/4 tsp. cloves 1/2 tsp. nutmeg 4 eggs 2 c. packed light brown sugar 3 tsp. baking powder 3 c. all purpose flour 1/2 tsp. salt 1/3 c. orange juice 1 c. shredded, unpared washed zucchini In large bowl cream butter, orange rind, cinnamon, cloves, nutmeg and brown sugar until fluffy. Beat eggs in, one at a time. Sift flour, baking powder and salt together. Blend into mixture alternately with orange juice. Stir in zucchini. Turn into greased 10 inch tube pan. Bake at 350 degrees for 55 to 65 minutes. Cool 10 minutes. Remove from pan to rack. Cool completely. Spread on glaze. GLAZE: 1 1/2 c. sifted confectioners' sugar 1 tbsp. butter 1/2 tsp. vanilla 2 to 3 tbsp. milk Beat until smooth. Drizzle over cake. |
