CHESTNUT - WALNUT LOAF 
2 lg. stalks celery, chopped
1 lg. onion, minced
2 carrots, minced
1/4 lb. sliced fresh mushrooms, optional
1 med. green pepper, chopped
1/2 tsp. dry mustard
1/2 tsp. sage
1/2 tsp. salt
2 cloves garlic, mashed & chopped fine
7 tbsp. whole wheat flour
1 tbsp. soy sauce
1 tbsp. Worcestershire sauce
1 c. milk (or substitute vegetable stock for parve)
2 eggs, beaten
1/4 c. olive oil (substitute vegetable oil if desired)
1 1/2 c. regular oatmeal, uncooked
11 oz. roasted chestnuts, chopped (see hint below)
1 c. walnuts, chopped

8 x 5 x 3 inch loaf pan. 350 degree oven.

Combine all ingredients and mix well. Let stand for 30 minutes to 1 hour. Press into greased pan. Bake for 1 hour and 15 minutes. May be topped with tomato sauce or onion gravy during final 15 minutes of baking, if desired.
