PATRICIA'S NUTRITIOUS DELICIOUS
PANCAKES
 
1 c. whole wheat flour (can use half white flour)
1 c. oat flour (see directions for oat flour below)
1 tbsp. baking powder
1 tsp. salt
1 tbsp. sugar or honey (if you use honey, add to wet ingredients)
2 to 3 eggs
1/2 c. oil
2 plus c. milk

Oat Flour: Put 3 cups oats in the blender at high until they become fine. It takes about 3 cups oats to make 1 cup flour.

Mix dry ingredients and wet ingredients separately. Combine. Cook on hot griddle.

Variations: Add blueberries or nuts or fruit to either the mixture or on each pancake after you pour it on the griddle.

Mashed bananas and nuts added to mixture give a banana bread flavor. Any pureed fruit can be added to mixture. To make Buckwheat pancakes substitute for 1/2 cup of flour. It is a strong flavored flour.

2/3 cup of dry milk can be added to dry ingredients and then 2 cups water added to wet ingredients. This is great when you make ahead.
