AUNTIE SAL'S CHEESY POTATOES | |
The aunt who gave this recipe to me uses a very informal measuring technique for her recipe so I took some extra time and figured out the exact measurements so that I could share this delightful recipe with the world. 5 lb. red potatoes, sliced 1 cup diced fresh onion (or 4 tbsp. minced/dried onion) 2 tbsp. seasoning salt (or your own favorite combination of salt, pepper, garlic, etc.) 5 cups all-purpose flour 5 cups milk 4 cups sharp shredded cheddar cheese 1 cup (2 sticks) butter, cut into pieces (no substitutions!) Preheat oven to 375°F and grease a very large baking dish (I use a 1/2 sheet cake pan). In a large bowl, mix the potatoes and cheese together (if using fresh onion add to this mixture). In a separate bowl, combine flour and milk, seasoning salt (or you favorite combination as suggested above), and minced onion (only if you didn't put fresh in the potato/cheese mix) until the consistency of pudding. Pour this mixture into the potato and cheese mix and stir up really good. Pour entire mixture into greased baking dish, top with butter pieces and bake at 375°F for 1 1/2 hours or until golden brown and potatoes are done. These are particularly tasty on the second day so I recommend preparing them the day before and then reheating (about 45 minutes at 375°F). For an extra tasty treat, sprinkle an additional 2 cups shredded cheese on top of them before reheating. This makes a very large batch of cheesy potatoes, excellent for family gatherings. Enjoy!!!
