PEACHES AND PUDDING CRISP 
2 to 3 c. drained peaches (canned)
1 tbsp. pudding mix
1/4 c. brown sugar
1/4 c. fruit syrup

TOPPING:

1/2 tsp. salt
1 tsp. cinnamon
1 pkg. (4 serving size) dry vanilla pudding
1/2 c. chopped nuts
1/2 c. butter, melted
1/4 c. sugar
2/3 c. flour
1/2 c. quick cooking or old-fashioned oats

Step 1: In ungreased 1 1/2 quart casserole or baking dish, combine peaches, 1 tablespoon pudding mix, brown sugar and fruit syrup. Set aside.

Step 2: Lightly spoon flour into measuring cup; level off. Combine topping ingredients in large mixing bowl until well blended and crumbly. Sprinkle over fruit mixture. Bake at 350 degrees for 45 to 50 minutes until deep golden brown and bubbly. Serve warm with ice cream or whipped cream.

I have always used cake mix as a topping but this recipe was so good my family wanted me to make it double in size next time. I don't think I will ever use cake mix as a topping again.
