FRIED GREEN TOMATOES 
5 to 6 green tomatoes
3 tbsp. butter or vegetable oil
2 eggs
1/4 c. milk
1 c. bread crumbs
1/2 tsp. dried oregano
1/2 tsp. dried thyme

Slice tomatoes into 1/4 inch slices. Beat together eggs and milk in one bowl. Mix the bread crumbs and herbs in a second bowl. Dip tomato slices in the egg mixture then in bread crumbs. Melt butter in frying pan and fry tomato slices for 3 to 5 minutes until the breading is golden and tomatoes are soft. Serve warm. Yields 6 servings.
