ZUCCHINI OATMEAL MUFFINS 
2 1/2 c. flour
1 1/2 c. sugar
1 c. chopped pecans
1/2 c. dry oatmeal
1/2 c. raisins (optional)
1 tbsp. baking powder
1 tsp. salt
1 tsp. ground cinnamon
4 eggs
1 med. zucchini
3/4 c. vegetable oil

Preheat oven to 375°F.

Measure into large bowl, flour, sugar, pecans, oatmeal, baking powder, salt and cinnamon. In a separate bowl beat eggs slightly, then stir in zucchini and oil. Stir egg mixture into flour and blend just until moistened (batter will be lumpy). Add raisins and mix.

Bake until a wooden pick inserted in center comes out clean (about 25 minutes).
