BRENDA'S GREAT LASAGNA 
1 1/2 lb. ground beef
1 medium onion, chopped
2 tsp. minced garlic (adjust to taste)
1/2 green bell pepper, chopped
salt and pepper, to taste
1 (24 oz.) jar marinara sauce
1 (15 oz.) can diced Italian tomatoes (undrained)
1 (16 oz.) box lasagna pasta noodles (uncooked)
1 large container cottage cheese
2 cups finely shredded Mozzarella cheese (more if preferred)

Brown ground beef, drain fat. Add onion, garlic, bell pepper, salt and pepper. Simmer for 15 minutes. Add marinara sauce and tomatoes. Simmer 15 to 20 minutes.

In a foil lined 9x13x2-inch baking pan layer lasagna noodles, 1/2 meat sauce, 1/2 cottage cheese, 1/2 Mozzarella cheese. Repeat. Cover with foil.

Bake in preheated oven at 350°F for 1 hour. Allow to cool 15 minutes before serving.
